ChuckWagon Charlie’s serves authentic slow smoke-roasted meat and foods. Our aim is to have you experience what it is like to feast, not only on the barbecue, but on smoked items from around these United States and beyond. We highlight slow cooking from the northern plains, the old and new West, as well as foods from our immigrant European heritage and more. We serve the highest quality meats, fish, seafood and other great items using the smoke and aroma of pecan, cherry, oak and hickory from 3 to 18 hours. The results are synergetic flavors that are authentic and slightly addictive; be it smoked brisket, hot smoked salmon, German sausage or our Southern favorites, including barbecued shrimp. For the most part, we keep our sauce on the side so you can experience the technique and flavor of slow cookery and the landscape of the food. Nevertheless, our house made sauce will enhance the flavor, even on those third and fourth bites.
